Kentucky farmer Brentโ€ฏWilliams, who was bitten by a loneโ€‘star tick and diagnosed with alphaโ€‘gal syndrome, has begun raising ostriches to supply a redโ€‘meat alternative for the estimated 450,000 Americans who canโ€™t eat mammalian meat. Williams, a lifelong cattle raiser, switched to the African bird after the tick bite left him unable to eat beef, pork or lamb. He now sells the dark, steakโ€‘like ostrich meat to local restaurants and directly to consumers with the allergy.

Alphaโ€‘gal syndrome is a food allergy triggered by a carbohydrate called galactoseโ€‘alphaโ€‘1,3โ€‘galactose, which is present in most mammals. The condition arises after a bite from the loneโ€‘star tick, which injects the sugar into the bloodstream and prompts the immune system to produce antibodies. As the tickโ€™s range expands across the Midโ€‘Atlantic, Midwest and Deep South, cases have risen sharply. The CDC reports that up to one in four people in affected areas now carry the antibodies, even if they have not yet shown symptoms. For those who develop hives, rashes or nausea after eating red meat, finding a safe protein source has become urgent.

Ostrich meat offers a practical solution because it lacks the offending carbohydrate. University of Kentucky nutrition professor Abigail Pace notes that ostrich provides all essential amino acids and is lower in fat than many traditional red meats. โ€œIt looks like beef but itโ€™s not a mammal,โ€ she said, highlighting its appeal to both allergy sufferers and healthโ€‘conscious diners. Williams, whose nickname in school was โ€œBeef,โ€ said the idea came from a desire to help others who faced the same dietary restriction. He now raises the birds on his farm and supplies them to eateries such as Papawโ€™s Poole Mill, where owner Kenneth Todd added an ostrich burger to the menu after trying it himself.

The ostrich burger has quickly become a regional draw. Customers travel hours to order the โ€œalphaโ€‘gal burger,โ€ and other chefs are watching the trend. If demand continues, more farmers may diversify into ostrich or other nonโ€‘mammalian red meats, expanding options for the growing number of people with tickโ€‘borne allergies. The shift also underscores the broader publicโ€‘health challenge of a tick population that is reshaping American diets.
